Summary

Soy sauce is a produced by combination of microbial products such as aspergillus, yeast and bacteria. During fermentation, these micro-organisms produce enzymes and metabolites, which form the color and flavor of soy sauce. The Zygosaccharomyces rouxii andTorulopsis yeast are one of the main micro-organisms that form the flavor within sause fermentation process.
