- Dough making: after the dough is fully developed, add the lemon peel and mix evenly.
- Dough temperature: 26-28℃
- Dough dividing: rest for 30 minutes, divide the dough into 100g per portion, rest again for 40 minutes and then mould the dough into shape.
- Dough shaping and decoration:
1. Roll the dough and spread the blueberry jam and lay raisin onside, then make four cuts with scissors;
2. Put the dough into the proff box and ferment for about 60 minutes, then brush egg yolk and sprinkle almond slices on the surface, bake the bread, and drip the bread with white chocolate after cooling.
