New processing technology of tea concentrate

Tea concentrate is a kind of high concentration tea juice made from finished tea, semi-finished tea, tea by-products or fresh tea leaves by extraction, filtration, concentration, sterilization and filling. Tea concentrate can be used as raw material in the process of tea beverage production. Nowadays, production technology of tea concentrate has made great progress in extraction, separation and concentration. Compared with the early processing technology, current countercurrent extraction, membrane separation and concentration can better retain the nutrients and flavour substances in tea, and improve the quality of tea concentrate.


1.Extractive technique

Tea extraction methods mainly include hot water extraction, enzyme-assisted extraction, microwave heating extraction, ultrasonic-assisted extraction, etc. Dynamic countercurrent extraction technology is a new extraction process developed in recent years. In terms of countercurrent extraction means that in the process of extraction, material and solvent move continuously at the same time, but the opposite direction of movement makes the material and solvent fully contact, and the solvent in the equipment is constantly updated, so that the extract can obtain a faster leaching speed and a higher extract concentration. Technology can not only significantly improve the leaching rate of tea inclusions, but also maintain the structure of active ingredients to the maximum extent, and aroma of tea soup is good.


2. Membrane separation technique

Membrane separation refers to the separation, classification, purification and enrichment of solutes and solvents in the mixture under the impetus of external energy or chemical potential difference by means of selective permeation of the membrane. Ceramic membrane is the most widely used in the production of tea concentrate. Ceramic membrane technology can significantly reduce the turbidity of tea juice and the total number of bacteria, remove the macromolecular substances in tea beverages, and keep the tea beverages clear without changing their original flavour, appearance, and operation process is simple and environmentally friendly.


3. Concentration technology

Concentration of liquid extracted from tea is generally low, and it is necessary to further increase the solids content by concentration. Now more manufacturers choose to use reverse osmosis concentration instead of vacuum evaporation concentration, which can better retain the quality components.


Reverse osmosis concentration is under high pressure, using cellulose acetate and its derivatives as semi-permeable membrane, which can intercept solute molecules in the range of 10-100000, compared with traditional vacuum evaporation concentration, reverse osmosis concentration can be operated at room temperature, and aroma and taste substances can be better retained. It is a concentration method mainly used in tea concentrate at present.
