Process. Weigh → mix → divide → round → rest → mould → proof → bake → finish. Mix all ingredients except plant-based butter on slow speed for 4 min, then fast speed until dough forms; add plant-based butter, slow mix until absorbed, then fast mix to window-pane stage. Dough temperature 26–28 °C. Rest 15 min. Divide 400 g/piece, mould, and proof at 37 °C to 80% of tin height. Bake uncovered: top 180 °C / bottom 200 °C, 30 min; or covered: top 200 °C / bottom 200 °C, 30 min. Customers may further optimise flavours on this yeast-protein base.
