Application of Enzyme in Yeast Polysaccharide Deep Processing

Yeast cell wall is “sandwich” structure，in order to make better utilization of yeast derivatives, Angel Special Enzyme Division develop complex enzyme SF408 used in the yeast deep-processing.
Yeast cell wall is “sandwich” structure under the electron microscope: the inner layer is beta-glucan, the middle is protein, and the outer layer is mannan. It can regulate the micro-ecological structure of animal digestive tract and improve the immune function of the organism. Yeast cell wall accounts for 18-30% of cell dry weight, which plays an important role in maintaining cell morphology and cell-to-cell recognition. Yeast cell wall polysaccharides are mainly composed of dextran and mannan, accounting for 60-65% of cell dry weight. Yeast glucan can induce a series of cellular and humoral immune responses. Yeast mannan can identify, adhere to and exclude pathogenic microorganisms and play a beneficial role in health of the host.
According to the characteristics of the yeast cell wall and yeast polysaccharide, Angel Special Enzyme Division develops complex enzyme SF408 used in the yeast deep-processing.

The function of Annzyme® complex enzyme SF408
Accelerating yeast cell wall rupture and promote yeast solute overflow;
Enzymatic preparation of water-soluble yeast glucan;
Increasing the solubility of yeast cell wall and yeast hydrolysate.
Application of SF408 in yeast extract production
The yeast hydrolysate was prepared from yeast mud. In the process of yeast autolysis, the solubility of yeast hydrolysate could increase 8-12% by adding SF408.

Application of SF408 in yeast cell wall production
When dealing with yeast cell wall with SF408, it helps the solubility of yeast cell wall increasing about 70%. You can see the effect of SF408 on the solubility of yeast cell wall in the below picture.

Application of SF408 in water-soluble yeast glucan production
When dealing with water-insoluble yeast glucan with SF408, it can make the final product with multi-functional water-soluble yeast glucan. You can also see the below picture on the soluble effect of yeast glucan.
