Gluten-free & Natural source of overall nutrition-Angel Nutritional Yeast

Gluten is a kind of component in wheat, barley and rye. It has elasticity, so it can bring chewy taste to pasta. In practice, the term 'gluten' refers to the proteins, because they play a key role in determining the unique baking quality of wheat by conferring water absorption capacity, cohesivity, viscosity and elasticity on dough. Gluten contains hundreds of protein components which are present either as monomers or, linked by interchain disulphide bonds, as oligo- and polymers.[1]

However, gluten involves toxic protein fractions: gliadins and glutenins which created the conditions for human diseases related to gluten exposure, the best known of which are mediated by the adaptive immune system: wheat allergy (WA) and celiac disease (CD)[2]. Nowadays, in most western countries, many foods are labeled Gluten-free because of gluten-related disorders on human body.

Angel Nutritional yeast is derived from specially selected pure strains of Saccharomyces cerevisiae and obtained by patented process without gluten. Because it does not come in contact with barley (like brewery by-product as is brewer's yeast), it is gluten free and safe for people with Celiac disease.
