Meatball recipe with Angel Yeast Extract

The Chief Chef Edward Shi shares two beef meatball recipes using Angel Xianness/umami YE KU012 and Flavor YE VTC232.

Recipe1 - 50/50 mix of ground beef and pork:

Combine the ground beef and pork, eggs, onion, breadcrumbs, salt, white pepper, Angel YE VTC232, and KU012 in a large bowl; mix with your hands until combined.

Shape into 105g meatball. Heat the butter and olive oil. Fry meatballs in batches, turning occasionally, until golden brown.

Add the water and soy sauce, bring to a boil. Reduce heat and simmer the meatballs for 40 minutes.

Recipe2 - all-beef meatball:

Combine the ground beef, eggs, chili pepper, curry powder, salt, breadcrumbs, Angel YE VTC232, and KU012 in a large bowl; mix with your hands until combined.

Shape into 105g meatball. Heat the butter and olive oil. Fry meatballs in batches, turning occasionally, until golden brown.

Sensory Evaluation:

Recipe1 - 50/50 mix of ground beef and pork:

Adding 50% of pork meat and onion makes the beef meatball extra soft while bringing an outstanding savory taste, intensified meaty notes, and a lasting Xianness/umami taste.

Recipe2 - all-beef meatball:

The recipe2 is an all-beef meatball. Compared to recipe1, adding 0.16% of chili pepper and curry powder and reducing 10g of breadcrumb makes the meatball dense and firm while giving a more elastic texture and less salty sensation. It has a highlighted beefy flavor, a bold meaty sensation, and a lasting Xianness/umami flavor.

Bottom Line:

Angel Xianness/umami YE KU012 and Flavor YE VTB232 work great to highlight the savory taste and aroma of the cuisine while adding a bold meaty sensation, and a lasting Xianness/umami flavor.
