Yeast Protein - New choice for sustainable sources of vegan protein of meat alternatives

As a meat alternative, the development of artificial meat will have an irresistible trend in the food field. Artificial meat is divided into two types: one is plant-based meat, which is mainly made from plant protein (soybean protein, pea protein, and wheat protein), and used to produce the meaty food with similar meat texture, taste and flavor through extrusion, shredding and seasoning technologies. At present, the extrusion technology applied to the plant-based meat mainly includes dry method and wet method. Dry extrusion technology is relatively mature; wet extrusion technology is a new technology that has attracted extensive attention from investors and consumers in recent years and has become a new hot spot in the food industry. The other is the cultured meat, which is derived from animal meat tissue cultured in vitro using stem cells based on the mechanism of muscle growth and repair. At present, cultured meat still needs at least 3 years to reach technical maturity and mass production, and the channel-side and the consumer-side are also urgent problems to be overcome.


The ingredient of the traditional plant-based meat products is soy proteins, whose development and application have been limited due to its own beany smell, allergens and lack of limiting amino acids.
