Meat products refer to cooked meat products or semi-finished products made by seasoning with livestock and poultry meat (pork, chicken, beef, etc.) as the main raw materials. Yeast extract, with yeast for food processing as the main raw material, is a food ingredient containing amino acids, peptides, nucleotides, and other soluble components in yeast cells. It is obtained by enzymolysis, autolysis, separation, and extraction under the action of enzymatic yeast or enzyme application in food processing, with or without thermal processing. Yeast extract has the functions of enhancing the umami flavor (no MSG), reducing salt (reducing the amount of salt added), increasing the umami flavor, making the taste rich and strong, and masking the peculiar smell. It is widely used in food processing industries.

Yeast protein, a kind of microbial protein, is fermented by special strains. It has high protein content, balanced amino acid composition, unlimited amino acid, and low fat. Additionally, it has the advantages of no anaphylactogen, non-GMO, environmental protection, and stable processing performance, among others. It can be used as an important supplement for protein nutrition upgrading of meat products.
