What is Prise de mousse yeast?

Prise de mousse is a French phrase which refers to the process of adding carbon dioxide to a drink to give it a foamy head. This process is used in making drinks such as beer, Champagne, sparkling wine and soda. Prise de Mousse shows the yeast strain originally came from the Champagne district of France. Prise de mousse is an excellent, general purpose yeast for both red and white wines. This yeast is tolerant to sulfur dioxide, and it is tolerant to high alcohol levels. Consequently, Prise de Mousse is useful for restarting stuck fermentations. Prise de Mousse is also used for the secondary fermentation of sparkling wine. Under normal conditions, Prise de Mousse produces little foam and seldom causes the winemaker any trouble.

Which Angel yeast is for champagne?

The yeast for champagne production is the PM16 strain. Firstly, this yeast is characterized by its robustness, low nutrient requirements, high alcohol tolerance, and the ability to ferment effectively at low temperatures, making it suitable for the production of white wine, sparkling wine, late-harvest wine, as well as cider and mead. Secondly, PM16 exhibits low production of H2S, and its vigorous fermentation yields a dry wine with a clean, neutral aroma, particularly enhancing the subtle pear and citrus flavors in Chardonnay. Thirdly, the strain has good tolerance to SO2 and high alcohol levels, making it highly recommended for restarting stuck fermentations. Lastly, PM16 boasts a rapid fermentation rate with a short lag time, and it also has a neutral contribution to the wine's organoleptic profile (low production of esters), making it an ideal choice for producing various types of red, white, and fruit wines.
