The fermentation process of alcohol is a complex reaction of microorganisms. In addition to the yeast that plays a fermentation role, a considerable amount of miscellaneous bacteria are also brought in from raw materials, air, water, pipelines, dead corners of equipment, etc. Therefore, alcohol fermentation is not a strictly sterile process. During the entire alcohol fermentation process, a small amount of miscellaneous bacteria will not affect the overall fermentation. However, if measures are not taken to control it, the miscellaneous bacteria will multiply in large numbers, consuming a large amount of carbon, nitrogen, amino acids and other substances, reducing yeast growth rate and biomass, ultimately causing the mash to sour and have a significant impact on the normal production and yield of alcohol. Therefore, effective control of miscellaneous bacteria in the production process is an important factor affecting the completeness of alcohol fermentation.
There are two main types of miscellaneous bacteria commonly found in alcohol production: bacteria and wild yeast. Bacteria and other miscellaneous bacteria pose the greatest threat to alcohol fermentation. Bacteria can be divided into Gram positive bacteria and Gram negative bacteria. Gram positive bacteria include Lactobacillus, Staphylococcus (Staphylococcus), Leuconostoc, Butyracillus, and Bacillus subtilis; Gram negative bacteria include Acetobacter and Escherichia coli. Wild yeast mainly includes Candida and Saccharomyces.
In order to reduce bacterial contamination during the fermentation process of the alcohol industry, acid treatment, the addition of antibiotics or chemical fungicides, etc. are generally used. However, there may be problems such as equipment corrosion, susceptibility to drug resistance, residual antibiotics and harmful chemicals. Therefore, developing natural antibacterial agents with strong antibacterial properties, no drug resistance, no residue, safety, and no toxicity is the future development direction.

This product is suitable for long-term use and can effectively inhibit the fermentation system's acid rise without affecting yeast growth and alcohol fermentation.
