RECIPE

1. Main Dough

(1) Add the ingredients except butter and pearl sugar into the mixing bowl and mix well on slow speed, change to high speed until the gluten is smooth (about 70%). Add butter, mix well at slow speed, change to high speed until the gluten is fully extended and the dough can pull a very thin transparent film, then add pearl sugar and mix well.

(2)When taking the dough out of the jar, keep the temperature between 26-28°C. Cover with plastic wrap and let the dough relax for about 20 minutes
