Dietary fiber plays an important role as the seventh major nutrient in food. Firstly, dietary fiber can promote gastrointestinal peristalsis, accelerate food digestion, and promote bowel movement, thereby improving the health of the digestive system. Secondly, dietary fiber can enhance satiety, reduce appetite, and help control weight and prevent overeating. In addition, dietary fiber can also reduce the digestibility of sugar, prevent metabolic diseases such as diabetes, and help lower cholesterol levels, thus preventing cardiovascular diseases.

Furthermore, research has found that some dietary fibers have certain functional activities. For example, some dietary fibers can promote the proliferation of beneficial bacteria in the intestines, improve the balance of gut microbiota, and enhance immune function and digestive system health. This provides more functional options for adding dietary fiber in food.

Yeast cell wall is an important byproduct of yeast extract and yeast protein production, accounting for about 15% to 30% of the dry weight of yeast cells. Protein accounts for 40% of the main components of yeast cell walls, while nutritional substances such as glucans and mannan polysaccharides account for 40%. Yeast cell walls contain rich dietary fiber, making them have great potential in food applications.

In addition to the above nutritional effects, the dietary fiber in yeast cell walls can also play processing characteristics in modern food industry. It has characteristics such as water retention, oil retention, emulsification, gelation, stabilizers, and thickeners, and is widely used in meat products, dairy products, solid beverages, milkshakes, and other food products. By adding an appropriate amount of dietary fiber from yeast cell walls, it can improve the texture characteristics of the product, enhance the stability and taste of the food.

The abundant dietary fiber in yeast cell walls provides a good opportunity for the nutritional fortification and functional activity of food. By adding an appropriate amount of dietary fiber from yeast cell walls, it can improve the texture characteristics of food, reduce sugar and fat content, increase product functionality, and meet consumers' demands for healthy and diverse food. In food research and production, fully utilizing the dietary fiber in yeast cell walls will bring more innovation and development opportunities to the food industry.

Soda biscuit

  • Recipe:

  • Production steps:

1. Prepare the dough. Mix all the ingredients and stir for 5 minutes, then let it ferment for 5 hours in an environment with a temperature of 38℃ and humidity of 85%.

2. Roll the dough. Use a dough press to gradually flatten the dough to a thickness of 1mm, then fold the dough and flatten it again to 1mm.

3. Divide. Divide the dough into pieces measuring 4*4cm2 each and arrange them on a baking tray.

4. Bake. Preheat the oven to 240℃ (top heat) and 200℃ (bottom heat), and bake for 10 minutes.

  • Adding yeast cell wall to soda biscuits has the following benefits:

1. Addition of yeast polysaccharide dietary fiber enhances the nutritional value.

2. Incorporating various flavor-enhancing ingredients from yeast improves the taste of the biscuits.

3. Increases the crispness and improves the texture of the biscuits.

Using yeast cell wall in savory and salty foods to enhance flavor, boost nutrition, and increase product crispness is an excellent choice.
