Formule: Fruits Bread

Ingredients

All-purpose Flour

500g

Angel Instant Dry Yeast

5g

Angel A800

Bread Improver

2. 5g

Sugar

15g

Butter

15g

Salt

8g

Water

350g

Fruits Mix


Cranberry

100g

Raisins

100g

Rum

20g

Operating Process:

Mix 100g cranberries, 100g raisins well, covered and keep for 12 hours

Dough making:

Mix 500g flour with 5g Angel yeast,and 2. 5g Angel bread improver

Add 15g sugar and 350g water, mix well.

Knead until the dough is springy and smooth.

Add 15g butter and 8g salt, knead until the gluten is fully developed

Stretch a small piece of dough to check if film forms

Add fruits into dough and mix well

Let rise in a warm place for about 40 minutes until doubled

Divide into 200-300g each ,mould the dough into round shape

Rest for 40 minutes

Mould into olive shape

Let rise in a warm place for about 60 minutes until doubled

Sprinkle with flour, cut on top

Bake at 200℃ for 25 minutes
