Yeast extract is a nutrient-rich complex derived from cultured yeast through hydrolysis, containing peptides, amino acids, mineral ions, vitamins, and other functional factors. By utilizing specific yeast strains, targeted hydrolysis technology, and nutrient fractionation techniques, nutrient-enriched yeast extracts can be produced.
Challenges in Industrial Microbial Fermentation
E. coli, Corynebacterium glutamicum, and Bacillus spp. are widely adopted as chassis cells in industrial microbial fermentation. A critical challenge in large-scale fermentation arises from the inoculation volume limitation (typically 0.1%-1% v/v), primarily driven by the scale-up discrepancy between laboratory-prepared inoculum and industrial-scale bioreactors. This suboptimal inoculation level may induce extended lag phases due to metabolic reprogramming, suboptimal initial biomass density, and elevated contamination susceptibility during the vulnerable early fermentation phase. Notably, modern fermentation processes have established multiple mitigation strategies, including optimized media composition, fed-batch supplementation, and environmental control protocols.
