Anuga 2023 was held on October 7th, attracting over 7,880 global companies and more than 160,000 attendees to the exhibition. During the concurrent "China & Europe Food and Beverage Consumption and Innovation Forum," Angel's European Innovation and Research Center Technical Advisor, Professor Thomas, delivered a detailed presentation on the application and prospects of yeast protein, titled "Yeast Protein: A New Sustainable and Eco-friendly Protein Resource."
Furthermore, Angel's baking division showcased the performance improvements brought by new specialty yeast for making frozen/refrigerated dough to the audience.
In the process of making pastries, dough fermentation is a crucial step. However, conventional yeast-made refrigerated dough often exhibits problems such as over-fermentation, swelling, dough thinning, and brittleness, while making frozen dough can result in slow fermentation after thawing and a strong off-flavor in bread. To address these pain points, Angel introduced refrigerated dough dry yeast and freeze-tolerant dry yeast.
Refrigerated dough dry yeast has excellent non-fermentation properties at low temperatures, maintaining the stability and texture of the dough during refrigeration and providing excellent expansion after thawing. Freeze-tolerant dry yeast can remain active at extremely low temperatures, improving the storage stability of the dough. The application of these two new yeast products significantly enhances the quality of low-temperature dough production, solving common issues during refrigeration and freezing processes, providing more choices and convenience for bakers and industrial users.
